Join Chef Brian Walter for a hands-on culinary workshop focused on cooking a whole delectable meal from just one pan!


This class is built around a core idea: when you understand why food cooks the way it does, you can cook anything with confidence. Come on over to learn the “why” behind great cooking, then sit down and enjoy the meal you’ve made together.


Using a single pan, Chef Brian will guide you through how fat renders, how heat transforms texture, and how flavor is built and balanced in real time. Rather than simply following steps, you’ll learn the mechanics behind cooking, giving you the ability to apply these techniques instinctively in your own kitchen!


Working with seasonal AOOA vegetables and premium D’Artagnan duck, guests will execute a complete dish while learning how to control timing, develop a proper pan sauce, and bring every component together with precision.


Light refreshments provided. Cocktails and spirits available for purchase. Space is limited, so please register in advance.

About the Instructor

Chef Brian Walter is the Executive Chef of 87 Sussex in Jersey City, where he leads a modern French kitchen rooted in classical technique and a deep respect for ingredients. With over 20 years of experience in four-star New York kitchens including Le Cirque, Lespinasse, and the French Consulate, his cooking is grounded in a simple principle: when you understand the why, you can execute at a higher level.


Chef Walter is known for a teaching style that gives both home cooks and serious enthusiasts the ability to move beyond recipes and cook with real understanding. He founded Bayberry Culinary Consultants and Bayberry Culinary Academy as platforms for culinary education, private events, and consulting.
